The nation makes up 45 per cent of the global mustard export market, with the Prairies driving the demand. Saskatchewan produces 60 per cent of Canada’s mustard, with Alberta at 40 per cent and rapidly closing in.
“That number has drastically increased over the last couple of years. I’d like to say it’s solely due to the profitability of mustard,” said Marc Vincent, director of agronomy, research and procurement at G.S. Dunn, at a Farming Smarter field school day near Lethbridge, Alta., concentrating on dryland crop agronomy.
“But, it might have to do something with the gigantic facility that has been developed in Bow Island. We have the world’s largest mustard and milling facility.”
WHY IT MATTERS
With a word-class mustard milling facility nearby, there has been an uptake in interest in mustard in crop rotations in Alberta and Saskatchewan as Canada continues to be an exporter powerhouse.
