Brassica juncea (L.), Oriental mustard, is the spiciest mustard seed. Mustard 21 is working with Agriculture and Agri-Food Canada on a hybrid variety.
Oriental mustard is the golden yellow seed coat coloured version of Brassica juncea. This mustard variety is mainly grown for export to Asian countries where it is used to produce condiments. Oriental mustard is the most piquant of the mustard seeds and is primarily used in Asia as a condiment in Japanese cuisine, and as source of spicy cooking oil in some other Asian countries.
Mustard 21 is currently working with Agriculture and Agri-Food Canada on a hybrid oriental mustard variety. Registration is planned for early 2025, with large scale demonstrations in 2025 and 2026.
